Step 1
Heat vegetable broth to simmer in separate pot
Step 2
Dice onion finely and sauté in butter over medium heat until translucent

Add arborio rice and stir for 2 minutes until lightly toasted

Deglaze with white wine and stir until fully absorbed
Step 5
Add warm broth one ladle at a time, stirring constantly and waiting for absorption between additions

When rice is creamy but al dente, remove from heat and stir in butter, Parmesan, and truffle oil
