Step 1
Soak glass noodles in warm water for 10-15 minutes until soft. Drain well and cut into shorter lengths.
Step 2
In a small bowl, whisk together light soy sauce, oyster sauce (or mushroom sauce), sugar, and white pepper. Set aside.

Heat oil in a wok or large skillet over medium-high heat. Add garlic and onion, stir-fry until fragrant, about 1 minute.

If using, add chicken or prawns and stir-fry until almost cooked through. Push ingredients to one side, crack eggs into the empty space. Scramble until cooked, then mix.

Add carrots, cabbage, and mushrooms. Stir-fry for 2-3 minutes until vegetables are tender-crisp.

Add drained glass noodles and pour the prepared sauce over everything. Toss vigorously to combine and ensure noodles are well coated. Stir-fry for 2-3 minutes until noodles absorb the sauce.
Step 7
Serve immediately, optionally garnished with cilantro.
