Step 1
In a blender, combine tomato sauce, onion, bell pepper, garlic, and ginger. Blend until smooth.

Heat oil in a large pot over medium heat and pour in the blended sauce. Cook for about 10 minutes, stirring occasionally.

Add rice, curry powder, thyme, and water to the pot. Stir well and bring to a boil.

Reduce heat to low, cover, and simmer for about 20-25 minutes or until rice is cooked.

While rice is cooking, season the chicken with salt and pepper, and grill until cooked through, about 6-8 minutes per side.
