Step 1
If not pre-made, prepare tonkatsu by breading and frying pork cutlets until golden and cooked through. Slice into 1-inch strips.
Step 2
In a small skillet or donburi pan, combine dashi, soy sauce, mirin, and sugar. Bring to a simmer over medium heat.

Add sliced onion to the simmering sauce and cook until softened, about 2-3 minutes.

Arrange the sliced tonkatsu over the softened onions in the skillet.
Step 5
Lightly beat the eggs. Pour the beaten eggs evenly over the tonkatsu and onions. Cover the skillet and cook for 1-2 minutes until the eggs are just set but still slightly runny.
Step 6
Place cooked white rice into a large serving bowl. Carefully slide the entire tonkatsu-egg mixture over the rice.
Step 7
Garnish with chopped scallions and serve immediately.
