Step 1
In a tagine or a large pot, heat olive oil and sauté onion, garlic, and carrots until soft.
Step 2
Add chopped zucchini and red bell pepper, cooking for an additional 5 minutes.

Stir in the spices and mix well, cooking for another 1-2 minutes.
Step 4
Add in chickpeas, dried apricots, and vegetable broth.
Step 5
Cover and let simmer on low heat for 30 minutes until vegetables are tender.
