Step 1
Place bulgur in a heatproof bowl and pour hot water over it. Cover and let sit for 15-20 minutes, or until water is absorbed and bulgur is tender. Fluff with a fork.
Step 2
While bulgur soaks, finely chop parsley and mint. Dice tomatoes and cucumber, and slice green onions.
Step 3
In a large bowl, combine the fluffed bulgur, chopped parsley, mint, diced tomatoes, cucumber, and green onions.
Step 4
In a small bowl, whisk together lemon juice, olive oil, salt, and pepper to create the dressing.
Step 5
Pour the dressing over the salad and toss gently to combine all ingredients thoroughly.
Step 6
Serve immediately or chill for a short time to allow flavors to meld. Best consumed fresh.
