Step 1
Preheat oven to 375°F (190°C).
Step 2
Sauté minced garlic in olive oil until fragrant, then add spinach and cook until wilted.
Step 3
In a bowl, mix cooked spinach with ricotta cheese, egg, salt, and pepper.
Step 4
Spread a layer of tomato sauce on the bottom of the baking dish.
Step 5
Layer noodles, ricotta mixture, mozzarella, and sauce, repeating until ingredients are used up.
Step 6
Top with remaining mozzarella and Parmesan cheese.
Step 7
Cover with foil and bake for 30 minutes, then uncover for an additional 15 minutes until bubbly.
