Step 1
Soak vermicelli noodles in hot water for 5 minutes until softened, then drain.
Step 2
Prepare the peanut dipping sauce by mixing peanut butter, soy sauce, water, lime juice, and sriracha until smooth.
Step 3
Dip a rice paper wrapper in warm water for about 10 seconds until softened.
Step 4
Lay the softened wrapper flat, and place a small amount of noodles, shrimp, cucumber, carrot, mint, and basil in the center.
Step 5
Fold in the sides of the wrapper, then roll it tightly from the bottom to the top.
Step 6
Repeat with remaining wrappers and ingredients. Serve with the peanut dipping sauce.
