Step 1
Marinate chicken thighs with salt, black pepper, and thyme. Set aside for 30 minutes.
Step 2
In a large pot, heat vegetable oil and sauté chopped onion and garlic until translucent.
Step 3
Add tomato paste and diced bell pepper. Stir and cook for about 5 minutes.
Step 4
Add rice, chicken stock, and whole scotch bonnet pepper. Stir to combine.
Step 5
Bring to a boil, reduce heat, cover, and simmer for 20 minutes until rice is cooked.
Step 6
While rice cooks, grill or bake the marinated chicken until done, about 20-25 minutes.
Step 7
Serve the Jollof rice topped with the spicy chicken.
