Step 1
Cook lentils: Rinse lentils, place in a pot with 3 cups water. Bring to boil, reduce heat, simmer 20-25 min until tender. Drain.
Step 2
Cook rice: Rinse rice. Cook in a separate pot with 2 cups water (or vegetable broth) and a pinch of salt. Bring to boil, reduce heat, cover, simmer 15 min until water absorbed. Fluff.
Step 3
Cook macaroni: Boil macaroni according to package directions. Drain.
Step 4
Make tomato sauce: Heat olive oil in a saucepan. Sauté minced garlic until fragrant. Add diced tomatoes, tomato paste, cumin, coriander, red pepper flakes, salt, and pepper. Simmer for 15-20 minutes, stirring occasionally, until slightly thickened.
Step 5
Make garlic vinegar (Daqqa): In a small bowl, whisk together white vinegar, minced garlic, water, and cumin.
Step 6
Make crispy onions: Toss thinly sliced onions with flour until coated. Heat vegetable oil in a pan over medium-high heat. Fry onions in batches until golden brown and crispy. Drain on paper towels.
Step 7
Assemble Koshary: Layer rice, then macaroni, then lentils in a bowl. Top with drained chickpeas.
Step 8
Generously spoon tomato sauce over the top. Drizzle with garlic vinegar and finish with a mound of crispy fried onions. Serve hot.
