Step 1
Wash bok choy thoroughly. Separate leaves and white stems. Cut larger stems in half lengthwise.
Step 2
In a small bowl, whisk together soy sauce, oyster sauce, sesame oil, and sugar for the stir-fry sauce.
Step 3
Heat cooking oil in a large wok or skillet over medium-high heat. Add minced garlic and grated ginger; stir-fry until fragrant, about 30 seconds.
Step 4
Add the white parts of the bok choy stems first and stir-fry for 2 minutes.
Step 5
Add the green leaves of the bok choy and continue to stir-fry until wilted but still vibrant, about 1-2 minutes.
Step 6
Pour the prepared sauce over the bok choy and toss quickly to coat. Cook for another 30 seconds.
