Step 1
In a large bowl, combine ground beef, grated onion (squeezing out excess moisture), chopped parsley, minced garlic, cumin, coriander, paprika, allspice, red pepper flakes, salt, and black pepper.
Step 2
Mix thoroughly with your hands until all ingredients are well incorporated and the mixture is slightly sticky. Do not overmix.
Step 3
Cover the bowl and refrigerate for at least 30 minutes to allow flavors to meld and the mixture to firm up.

If using wooden skewers, soak them in water. Preheat grill to medium-high heat or oven to 400°F (200°C).
Step 5
Take about 1/4 cup of the meat mixture and firmly mold it around a skewer into a long, cylindrical shape. Repeat with remaining mixture.
Step 6
Grill kofta for 8-12 minutes, turning occasionally, until cooked through and nicely charred. If baking, place on a baking sheet and bake for 15-20 minutes.

Serve hot with rice, pita bread, yogurt sauce, or a fresh salad.
