Step 1
Peel and slice potatoes into thin rounds.
Step 2
Heat olive oil in a large skillet over medium heat; add potatoes and cook until tender, about 10 minutes.

Add sliced onion and chorizo; cook until onion is translucent, about 5 minutes.
Step 4
In a bowl, whisk eggs with salt and pepper; pour over the potato and chorizo mixture. Cook until edges set, about 5 minutes.

Carefully flip the tortilla and cook on the other side until fully set, about another 5 minutes.
