Step 1
Peel and dice the mangoes. Dice red bell pepper, cucumber, and red onion into small, uniform pieces.
Step 2
Chop cilantro. Crush roasted peanuts coarsely.

For the dressing: In a small bowl, whisk together lime juice, finely minced scotch bonnet (or chili flakes), honey/agave, and salt.

In a large bowl, combine the diced mangoes, bell pepper, cucumber, and red onion.
