Step 1
In a small bowl, combine warm water, yeast, and sugar. Let sit for 5-10 minutes until foamy.

In a large bowl, combine flour and salt. Pour in the yeast mixture and 3 tablespoons of olive oil. Mix until a shaggy dough forms, then knead on a lightly floured surface for 5-7 minutes until smooth and elastic.

Place dough in an oiled bowl, cover, and let rise in a warm place for 1-1.5 hours, or until doubled in size.

While dough rises, prepare toppings: In one bowl, mix za'atar with 1/4 cup olive oil. In another, have the shredded cheese ready.

Punch down the risen dough and divide into 6-8 equal balls. On a lightly floured surface, roll each ball into a thin, round flatbread (about 6-8 inches in diameter).

Preheat oven to 450°F (230°C) with a baking stone or inverted baking sheet inside if possible.

Spread za'atar mixture or shredded cheese evenly over each flatbread. Carefully transfer flatbreads to the hot baking surface.
Step 8
Bake for 5-8 minutes, or until the edges are golden brown and the cheese is bubbly. Serve warm.
