Step 1
Preheat the oven to 375°F (190°C). Roast poblano peppers until charred, then peel and deseed.
Step 2
In a skillet, cook ground beef with diced onion until browned. Season with salt, pepper, garlic powder, and cumin.

In a bowl, whisk eggs with milk and set aside.
Step 4
Layer the bottom of a casserole dish with poblano peppers, followed by ground beef, and half the cheese.
Step 5
Pour the egg mixture over the layers, then top with remaining cheese.
Step 6
Bake for 30 minutes until set and golden on top.
