Step 1
In a large pot, heat olive oil and sauté chopped onions until golden brown, about 10 minutes.

Add minced garlic and ginger; cook for 2 minutes.

Stir in berbere spice, tomato paste, garlic powder, salt, and pepper for 2-3 minutes.

Add chicken and brown on all sides, about 5 minutes.

Pour in vegetable broth and simmer for 30 minutes until chicken is cooked through.

Add hard boiled eggs just before serving to warm them up.
