Step 1
Preheat oven to 425°F (220°C).
Step 2
Mix za'atar, olive oil, minced garlic, salt, and pepper in a bowl.
Step 3
Rub the mixture all over the chicken and inside the cavity.
Step 4
Cut lemon in half and place inside the chicken along with some garlic cloves.
Step 5
Arrange chopped potatoes and carrots in a roasting pan, drizzle with olive oil, salt, and pepper.
Step 6
Place chicken on top of vegetables and roast for about 1 hour, checking for doneness.
