Step 1
Make ragù by browning ground beef with diced onion, then simmer with tomato sauce for 20 minutes
Step 2
Prepare risotto by toasting rice in butter, then adding warm broth gradually while stirring

Stir Parmesan into finished risotto and spread on baking sheet to cool

Cut mozzarella into small cubes

Once risotto is cool enough to handle, form into ball with ragù and mozzarella in center

Beat egg yolks and set up breading station with beaten eggs and breadcrumbs

Dip each arancino in egg, then coat thoroughly with breadcrumbs

Heat oil to 350°F in deep pot or fryer

Fry arancini in batches for 2-3 minutes until golden brown

Drain on paper towels and serve hot
