Step 1
In a large bowl, combine ground pork, minced garlic, fish sauce, sugar, black pepper, baking powder, and annatto oil (if using). Mix very well until mixture is sticky and cohesive.

Marinate the pork mixture in the refrigerator for at least 1 hour, or up to 4 hours. Soak wooden skewers in water.
Step 3
Divide pork mixture into equal portions (about 1.5 tbsp each) and shape into elongated patties around the soaked skewers.

Preheat grill or grill pan to medium heat. Lightly oil the grates.

Grill pork skewers for 4-6 minutes per side, turning occasionally, until cooked through, beautifully browned, and slightly caramelized.

Cook vermicelli noodles according to package directions. Prepare fresh lettuce and herbs.
