Step 1
In a pot, combine water, butter, sugar, and salt; bring to a boil.
Step 2
Remove from heat, stir in flour until a dough forms, and let cool slightly.

Add eggs one at a time, mixing well after each addition until smooth.

Heat oil in a deep pot over medium heat.
Step 5
Scoop the dough into a piping bag fitted with a star tip; pipe into hot oil in desired lengths and fry until golden.
Step 6
Remove churros and drain on paper towels, coat with cinnamon sugar mixture.
Step 7
For the dip, heat chocolate and heavy cream in a saucepan until melted and smooth.
