Step 1
Preheat oven to 325°F (160°C).
Step 2
In a large oven-safe pot or Dutch oven, cook diced bacon over medium heat until crispy. Remove bacon with a slotted spoon, reserving 2 tbsp of bacon grease in the pot.
Step 3
Add chopped onion to the pot with bacon grease. Sauté until softened, about 5 minutes.
Step 4
Stir in the drained and rinsed beans, half of the cooked bacon, brown sugar, molasses, ketchup, Dijon mustard, apple cider vinegar, and water. Mix well.
Step 5
Bring the mixture to a simmer on the stovetop. Season with salt and pepper to taste.
Step 6
Cover the pot and bake for 1.5 to 2 hours, or until beans are tender and the sauce has thickened. Stir occasionally.
Step 7
Remove lid for the last 30 minutes of baking if you prefer a thicker sauce. Garnish with remaining crispy bacon before serving.
