Step 1
Preheat oven to 400°F (200°C).
Step 2
Heat olive oil in an oven-safe skillet over medium heat. Add chopped onion and sauté until softened, about 5 minutes. Stir in minced garlic, oregano, and red pepper flakes (if using); cook for 1 minute.
Step 3
Pour in crushed tomatoes, season with salt and pepper. Bring to a simmer and cook for 5-7 minutes until slightly thickened.
Step 4
Add shrimp to the sauce and cook for 2-3 minutes until they just begin to turn pink. Pour in the ouzo (or wine) and cook for another minute.

Remove skillet from heat. Sprinkle crumbled feta cheese evenly over the shrimp and sauce.

Transfer skillet to the preheated oven and bake for 10-15 minutes, or until feta is bubbly and lightly golden, and shrimp are fully cooked.
Step 7
Garnish with fresh chopped parsley and serve hot with crusty bread.
