Step 1
Chop onions finely and sauté them in vegetable oil over medium heat until golden brown, about 10-15 minutes.
Step 2
Add minced garlic and ginger, stir for another 2 minutes.

Stir in berbere spice mix and tomato paste, cooking for another 5 minutes until fragrant.
Step 4
Add chicken pieces, stirring to coat in the spice mix.
Step 5
Pour in chicken broth, bring to a boil, then reduce heat to low and cover. Simmer for 45 minutes.
Step 6
Add hard-boiled eggs to the stew, allow to heat through for 5 more minutes before serving.
