Step 1
For the crust: In a bowl, combine flour and salt. Add olive oil and cold water; mix until a dough forms. Press into a 9-inch pie plate. Chill for 15 minutes.
Step 2
Preheat oven to 375°F (190°C). In a skillet, heat 1 tbsp olive oil. Sauté diced zucchini and red bell pepper for 5-7 minutes until tender-crisp. Add spinach and cook until wilted. Season with oregano, salt, and pepper. Let cool slightly.
Step 3
Scatter the cooled vegetables and halved cherry tomatoes evenly over the bottom of the chilled pie crust.

Sprinkle crumbled feta cheese over the vegetables.

In a bowl, whisk eggs and milk until well combined. Season with salt and pepper. Pour the egg mixture over the vegetables and feta in the pie crust.

Bake for 45-55 minutes, or until the center is set and the crust is golden brown. If crust browns too quickly, cover edges with foil.
