Step 1
In a large bowl, mash the ripe bananas until mostly smooth, leaving a few small lumps for texture.

In a separate bowl, whisk together the flour, sugar, baking powder, nutmeg, cinnamon, and salt.

Add the mashed bananas and milk (or water) to the dry ingredients. Stir until just combined; do not overmix.

Heat vegetable oil in a deep pan or skillet over medium heat until hot.
