Step 1
Marinate chicken with salt, pepper, and half the onions, garlic, and ginger for at least 30 minutes.
Step 2
In a large pot, heat oil, add marinated chicken, and brown on all sides for about 10 minutes. Remove and set aside.
Step 3
In the same pot, blend remaining onion, garlic, ginger, and tomatoes into a smooth paste.
Step 4
Add the tomato paste to the pot along with thyme, bay leaves, and pepper; cook for 10 minutes.
Step 5
Stir in rice and chicken broth; return chicken to the pot, cover, and simmer on low heat for 20 minutes, or until rice is cooked.
Step 6
Add green peas in the last 5 minutes of cooking.
Step 7
Fluff the rice and serve hot with additional chicken if desired.
