Step 1
Cut chicken thighs into 1-inch cubes. In a bowl, combine lemon juice, olive oil, oregano, minced garlic, salt, and pepper. Add chicken and marinate for at least 30 minutes, or up to 2 hours.
Step 2
For tzatziki: Grate cucumber and squeeze out excess moisture. Combine with Greek yogurt, minced garlic, chopped fresh dill, and a squeeze of lemon juice. Season with salt and pepper. Refrigerate.
Step 3
Soak saffron threads in 2 tbsp hot chicken broth for 10 minutes. In a saucepan, combine rinsed rice, remaining chicken broth, and saffron mixture. Bring to a boil, then reduce heat, cover, and simmer for 18-20 minutes until liquid is absorbed.
Step 4
Thread marinated chicken onto wooden skewers. If using wooden skewers, soak them in water for 30 minutes prior to prevent burning.
Step 5
Preheat grill to medium-high heat. Grill skewers for 3-4 minutes per side, turning occasionally, until chicken is cooked through and lightly charred.
Step 6
Fluff saffron rice with a fork. Serve grilled chicken souvlaki skewers with saffron rice and a generous dollop of tzatziki.
