Step 1
Pat chicken thighs completely dry with paper towels, season generously with salt and pepper
Step 2
Place skin-side up on oiled baking sheet and roast at 450°F for 35 minutes until skin begins to crisp
Step 3
Whisk together honey, soy sauce, rice vinegar, minced ginger, and sesame oil
Step 4
After 35 minutes, brush glaze over chicken and return to oven
Step 5
Increase heat to 475°F and roast for additional 12-15 minutes until skin is deeply golden and crispy
Step 6
Remove from oven and let rest for 5 minutes, then brush with final glaze coat
Step 7
Slice chicken meat into pieces, keeping skin intact
Step 8
Serve with warm crepes, hoisin sauce, sliced cucumber, and scallion strips for wrapping
