Step 1
Prepare noodles by separating if fresh, or soaking if dry. Cut Chinese broccoli into bite-sized pieces, separating stems and leaves. Whisk eggs.
Step 2
In a small bowl, combine dark soy sauce, light soy sauce, oyster sauce, white vinegar, and sugar for the sauce.
Step 3
Heat 1 tbsp cooking oil in a large wok or skillet over high heat. Add beef and stir-fry until just cooked through. Remove and set aside.
Step 4
Add remaining oil to the wok. Add minced garlic and stir-fry for 15 seconds. Push to one side. Pour whisked eggs into the empty space and scramble until just set.
Step 5
Add Chinese broccoli stems and stir-fry for 1 minute. Add leaves and stir-fry for another minute until tender-crisp.
Step 6
Add wide rice noodles to the wok. Pour the sauce mixture over the noodles. Stir-fry vigorously for 2-3 minutes, coating everything evenly.
Step 7
Return beef to the wok and toss to combine. Serve immediately.
