Step 1
Clean chicken; blanch in boiling water for 5 minutes, then rinse. Place in a large pot with 12 cups of fresh water.
Step 2
Char onion and ginger over an open flame or under broiler until fragrant and slightly blackened. Add to the pot.
Step 3
Toast star anise, cinnamon, cardamom, cloves, and coriander seeds in a dry pan until fragrant. Add to the pot.

Bring to a boil, then reduce heat and simmer gently for 1.5-2 hours, skimming impurities, until chicken is tender and broth is flavorful.
Step 5
Remove chicken, shred meat, discard bones. Strain broth, then season with fish sauce and sugar.
Step 6
Cook rice noodles according to package instructions. Divide noodles and shredded chicken among serving bowls.
Step 7
Ladle hot broth over noodles and chicken. Serve with fresh bean sprouts, mint, cilantro, and lime wedges.
