Step 1
Crush lemongrass stalks lightly with back of knife to release oils, cut into 2-inch pieces
Step 2
Bring stock to boil in large pot, add lemongrass, galangal, and lime leaves
Step 3
Simmer for 5 minutes to infuse aromatics into broth
Step 4
Add sliced mushrooms and Thai chilies, simmer for 3 minutes
Step 5
Add shrimp and cook until pink and just cooked through, about 3 minutes
Step 6
Stir in fish sauce and palm sugar, taste and adjust seasonings
Step 7
Remove from heat, add lime juice just before serving
Step 8
Ladle into bowls and garnish generously with fresh cilantro
